The landscape in Sardegna is dotted with sheep everywhere you look. In fact, Sardegnans have been tending sheep since the beginning of recorded history (about 1000 BC). The sheep found in Sardegna are from ancient stock and live in the wild. It is these wild sheep that produce the milk for the different types of Pecorino found on the island.
A semi-cooked cheese that matures for at least 4 months, typical of the Sardinian dairy tradition. The rind is smooth, intense yellow-colored, treated on the surface with olive oil; the paste is compact, more or less hard depending on the maturing and straw yellow-coloured. The flavor is intense, rich and complex, accentuated by maturing.
This Aged Pecorino Sardo "PDO" is safeguarded by the "Protected Designation of Origin" and produced according to strict rules, only with whole milk of Sardinian pastures. The perfect companion to a red wine of character, matured cured meats and homemade bread.
