We connected with the producer of this exquisite Olive Oil on our last trip to Sardegna! Their attention to detail and commitment to quality truly come through with every drop. All the olives are hand harvested from a small family grove and are cold pressed within 24 hrs. of harvesting. The oil is stored in stainless steel tanks in a temperature controlled room, using nitrogen to prohibit oxygenation. This means the oil is completely protected from both light and air at all times, and, as a result, is so pure and unadulterated that it has an always freshly harvested flavor, and has all the polyphenols and active ingredients beautifully preserved.
